Cookies are a tangible expression of Christian love and an indication of God’s concern to a group of people who seldom encounter either in their daily lives. Around 6,000 dozen cookies are needed for Kairos weekends, and we answer this call twice a year.HINTS
- Cookie types accepted include chocolate chip (except for Buckingham), peanut butter, oatmeal, ginger, molasses
- Plain cookies only, please – no coatings or icing. Also please, no raisins, inside or out.
- Size: 2 to 21/2 inches, about 1/2 inch thick
- Use recipies and cooking time for softer, sturdy cookies; crispy cookies can crumble during handling
- Please bag them in a small zip-lock freezer bag, with only one dozen in a bag
- Label each bag with “1 dozen” and the type of cookie inside
- Please freeze all the cookies if they are to be stored before pickup or delivery
FAVORITE RECIPES
CHOCOLATE CHIP
(makes about 12 dozen)3 cups flour
2 teaspoons baking soda
2 teaspoons salt
2 cups solid vegetable shortening
2 cups packed light brown sugar
1 cup of sugar
4 eggs
2 teaspoons vanilla extract
4 cups rolled oats
2 12oz packages semisweet chocolate chips
- Blend flour, soda and salt in a separate bowl
- Cream shortening, both sugars and vanilla
- Add eggs and beat
- Add flour mixture and rolled oats
- Fold in chocolate chips
- Bake at 350º for 10 minutes
- Remove from cookie sheet, cool completely, then package as noted under HINTS
1 cup margarine
PEANUT BUTTER
(makes about 10 dozen)
1 cup peanut butter (smooth or crunchy)
1 cup packed light brown sugar
1 cup granulated sugar
2 eggs
3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 salt
- Cream margarine, peanut butter, both sugars and eggs
- Blend remaining ingredients in a separate bowl
- Add flour mixture to margarine mixture
- Roll dough into 120 balls
- Place about 2 inches apart on a cookie sheet
- Flatten slightly (1 1/2 ” circle), crisscross style, with fork
- Bake at 350º for 10 minutes
